Fried plantains, Kerala style...
for 2 ripe plantains sliced and cut into servings:
use half a cup of flour
1/3rd tsp cumin seed powder
1 tbsp sugar (more if you prefer)
salt to taste
Mix batter ingredients with water to form a batter that is not too runny.
slice up Plaintains lengthwise and into segments.
This recipe from Kerala state, India is much loved. Plantains are referred to as "Etheka" in the Malayalam language, the local language of Kerala. Several varieties of plantains grow there.
